A new healthy but tasty recipe : squash and chickpeas and butternut squash burgers easy to prepare and really yummy, perfect for a light and healthy lunch!

Chickpeas and squash burger

Servings:4 burgers


  • For the burgers
  • chickpeas in water drained : 250 grams
  • butternut squash cooked : 250 grams
  • Parmesan cheese freshly grated: 30 grams
  • smoked paprika: 1 tsp
  • chickpea flour
  • salt and pepper
  • Yogurt dressing
  • goat yogurt: 200 grams
  • English mustard: 2 tsp
  • salt and pepper


  1. Cut the squash into 2 or 3big pieces and cook it into the oven with the skin at 200°C until tender. Let it cool down then peel it.
  2. Drain the chickpeas and wash them thoroughly with cold water. Whirl them in a blender with the squash, then add the parmesan, the paprika, salt and pepper and whirl again until all the ingredients come together. If the mixture is too wet add a little bit of chickpea flour, if it's too dry add some extra virgin olive oil or just a little bit of water.
  3. Form the burgers and put them onto a tray lined with parchment paper. Cook in the preheated oven at 180 C until golden and crisp.
  4. Mix the yogurt with the mustard, season with salt and pepper and use this sauce to serve the burgers.
